Dinner Tonight

I made orange peel chicken tonight - I kind of winged it. My husband loves it but regular orange peel chicken has sugar and orange juice in it and he does a low carb diet so this is changed a bit for him.

3 chicken breasts - cut into bite size pieces
4 green onions, chopped
2 tbsps or so of soy sauce
1 garlic clove
3 tbsps of vegetable oil
1/4 cup of water
~.5 lb. of snow peas - boil for 3 minutes and then rinse in cold water before adding to the pan.
4 oranges' worth of peel
1 tbsp. splenda (or sugar)
2 tbsp. of garlic chili sauce

I heated up a large saute pan with the oil and heated up the garlic over medium high heat. After the garlic browned ever so slightly, add in the green onions, soy sauce, water, garlic chili sauce, and splenda, turn the heat down to medium. Let it cook for 5 or so minutes to reduce down. Then add the chicken and orange peel. Cook until the chicken is done and add in the snow peas. Cook for another minute or two, until everything in coated. Serve over rice, or plain!
